Mastiha is a resinous sap produced from the trunk and branches of the mastic tree and is available in three types: Large, Medium and Small.
Mastiha has been traditionally used as a flavouring for festive breads, brioches and biscuits. It is also used in confectionery, mostly for mastiha-flavoured desserts and for a delicious ice-cream known as “kaimaki”, which has an unusual chewy and stringy texture thanks to the addition of Chios mastiha as a thickening agent.
Since 1997, Chios mastiha has been characterized as a Product of Protected Designation of Origin (PDO), and is protected from the sale of any competitive imitation product whatsoever.
